As I wrote in the title, I am looking for a guild like that but I haven’t found one yet. There are those with military connections, but I’ more of a more independent and underground type. Is there a guild like the one I’m looking for? If not, I’m thinking of creating one myself.
The closest in-universe organisation to what you describe is probably the Uncrowned (rogue order hall from Legion). I can’t say if there’s a roleplay guild attached to them, but that’d be your best, first bet in looking. I’ve met a bunch of Uncrowned affiliated OCs over the years, so at the very least you’d have roleplayers with a similar interest – which is a good starting point.

I cannot say I know many guilds like it. But there is one like The Oath of Silver - though they’re not exactly always ‘good guys’

To my knowledge, the Oath of Silver is a criminal guild. Theolain is more of a blood elven Don Corleone or Tommy Shelby than Ezio Auditore. From what I recall they’re definitely a cool guild, but not necessarily what OP was asking about.

Since you’re a Pandaren, the Shado-Pan might be what you’re looking for. Especially since there is a small contingent dispatched in Khaz Algar, including the Wu Kao leader Taoshi, there is no lack of work to do. Unfortunately, exclusively Shado-Pan guilds don’t tend to live long either, but if you play it right, you may well find good reception in any existing Pandaren guild (no Pandaren bias meant).

I seem to recall that there were attempts to create an Uncrowned guild/community (which is the closest thing to what you’re looking for in the setting) but it didn’t fly for long, so it’s definitely an open space. I’d say go for it.
Though bear in mind that the intelligence gathering/spy scene is a very peculiar niche and you won’t have a million of potential ‘aplicants’ to pick from to roleplay with, compared to say any adventurer/soldier/guard guild. Though at the same time that fits the concept - less is definitely more.

‘information gathering’ - you mean just IC or something more real?
First of all, I have been roleplaying in Argent Dawn for a while now and I have observed that many roleplaying guilds are corrupt, I have also been fighting a huge gnome crime syndicate on my own for three weeks. I’ve enjoyed this roleplaying I’ve been doing for three weeks so much that I’m planning to turn it into a guild and do it collectively on a larger scale. So mainly IC. I didn’t quite understand what you meant by “something more real” so I explained the situation as best I could.
