i have been kicked at least 5-6 times in past week on instant cast spells , on my priest with power word shield, on my monk with renewing mists . Am i imagining this and its all random.
People manage to interrupt my fists of fury and it gives me a 5 secound Nature lock so no

Nah, I’m sure these people were just the absolute interrupting gods. Even if they only were at like… 1800 rating and their gameplay was overall quite terrible.
Glad to see its not just me ,im pretty try hard for an old man playing the game. But i cant try any harder than the bots , no matter how good or old i am.
seen it a few times where players always interrupt at the last 0.1 secs of a cast, and when they are targeting someone else but they never change their target to you but somehow interrupt you.
Focus, mouseover and arena123.
The 99% part could of course be bots but I doubt it, if you’re good at PvP you know to interrupt late.
It comes from @focus every pvper use it and swap focus often you can see it on stream.
Like the druid said some people are good at kicking and even fake casting you have, during your games Evaluate how your opponent likes to kick (if you see you got 3times kick at 90%by the same guy, you can fake him by thinking he always kick at 90%).
For example I pretty much everytime kick the fast heal from paly but it require to be super fast and predict it 
Most classes feel like they have kick bot when even the melee now can all basically kick you from China.

Don’t give the caster another pseudo reason to complain about. You know, this guys will trust you and run around with “fake news”. 
Only melees that can kick from range are DK, Feral and for some unknown & weird reasons: DH. I think it’s 13 yards (feral) and 15 yards (DK/DH) - could be wrong tho.
All other melees have to invest a gapcloser to do so. Stepkick, Chargekick, etc. And some classes “can’t” kick on range, even with a gapcloser (Monk for example) - it takes them so long to get there that basically anyone will realize to stop the cast.
For many people, DK and DH encompasses almost all melee that they see. Agreed with the rest of your points though 
I actually see more rogues than dk/dh - but that doesn’t count I guess, only playing a few games per week to cap. ^^
Anyways: We realize a lot more often things we hate than things we don’t care that much about (fun fact: sympathy grows more if two people dislike the same thing(s), instead of liking the same thing(s)!). So I guess it just feels like that you face “only” DH/DK. ^^

Indeed, perspective is important.
What about shamans? I know enhancement does not exist right now, but their kick is still ranged nonetheless.

happens more in bgs than arena tbh couldn’t see people making different macros for every bg i mean i guess they could
Mouseover-macros or just addons like BattleGroundEnemies (right click to focus someone). Not that unique, at least in RBGs.
Feral&Enh kick were always ranged
DH and DK don’t need it at all and Rogues also do not need a 5 sec kick.
Sometimes it is because of the server, Idk how it works but someone explained to me when I asked about something weird.
For the story, I played VS rogue/paly and I decided to fear rogue. I did it and got kicked like 1sec after and I could see the rogue running in fear with the icĂ´ne on his nameplate (with big debuff).
Tbh I didn’t see any cheat since bfa but during legion I have seen a lot and all from Russian players.
Just got pummeled on a dispel , god the mouseover macros are good boys
