I play mostly Protection warrior on retail and was wondering out of all the races, despite appearance, what would be the best for tanking in terms of dungeons and raids. I was thinking Kul Tiran for the passive, and the extra stun helps.
Dwarf for anything that puts a bleed on you.
Night Elf for minmaxing Mythic plus.
However-
It’s been said before and I’ll say it again. It doesn’t matter.

Realistically it doesn’t matter unless you are pushing +20 keys and mythic raiding and even then, the difference is extremely minimal because at that level your skill with the class will have a far greater impact and anything less than flawless will mean the racial abilities aren’t going to make or break it.
Wowhead is quite comprehensive on the strengths and weaknesses of each race but…and I can’t stress enough, pick a race you would enjoy, you say appearance doesn’t matter but not all races will look good in your favourite mog.

I actually think it may be mechagnome for warrior since they get more primary stat which of course gives you more armour and stronger ignore pain etc.
They also get an auto heal when low on health.
They can even pick locks for certain dungeons and save inventory space on profession tools.
and on top of all of that you get to use a mages mirror image spell.

Alliance prot warrior- Kul tiran
Horde prot warrior- Highmountain Tauren
