Monks are very limited in WoW lore unfortunately, however I was thinking to play as a Dwarf Monk! Monk being my favorite Class in the game I also want it to make sense in terms of RPG to make me feel more immersed into the game. Here is a story I was thinking for my Dwarf and I would like to hear this community’s thought on it.
For a start my Dwarf is a former Dwarven Brewer for the Bronzebeard Clan during the Brewmaster Fest. As you already know Chen stormstout and the Dwarves had Competitions when it came to being a Brewmaster. So when my Dwarf arrived at Pandaria he took interest of being a Brewmaster Monk.
I just have to think of a good backstory and a good text that is going to fit that narrative but would this make sense in terms of lore?
Absolutely. It has been quite a few years now since MoP, so you won’t even have to be completely unexperienced. Maybe your were a brawler before that brewed ales and went to Pandaria to refine both those skills. I think out of all the non panda races Dwarves are the best choice to be brewmasters.
I would maybe change that to a Dark Iron Brewer that participated in brewing during the fest.
In addition, you could integrate your Dark Iron origins into drinking brews which would cause you to breathe fire for a short moment (I believe it’s an actual ability).
In terms of roleplay, I’ve seen Dwarven Monks and I believe most Dwarven guilds will even accept you without issue!
Dark Iron brewers appear to be a tad more common, but there’s a few well known Bronzebeard brewers too, especially present during Brewfest and you also have a (daily) cooking quest where they send you out to get a barrel of brew from Kharanos to Ironforge with a timed run, no Dark Irons involved at all!
Ofcourse the deciding factor is which of the two you prefer.
Wonderful to see a dorf wanting to go full brewmaster! Very fitting since … well … dwarves are kind of know for drinking!
But - to answer you in regards to direction; any of the three major clans could work for this concept! It’s just all down to the spice and flavor of the RP you wish to partake in.
Bronzebeard, tried and true and hearty! Classic brewers with a revered history of such. Even having connections to pandaria through a shared interest of brewing and consuming ales and liquors!
Dark iron, joining a biiiiiit late into the “alliance” - they are a bit more crude; famous for STRONG and bitter drinks, like pluggers, slammers or their dark ale.
Being the antagonist to the other clans for much of their shared history - they break a hit from tradition; even having history of envy and attempts of stealing recipes from the other clans.
A wildhammer, are veerrry famous for their clan/and local ales; brews kept by each clan - and shared to only friends and close kin. Except for a select few shared brews; they - like their clan, is quite disparate and scattered. Individualism; only on a tribal scale
And if you want more research; check out “Pearls of pandaria” - a comic that includes a bit of official lore connections between Brewfest, pandas and dwarves of different clans!
Besides that - read up on the lore for brewfest; check the npcs / vendors and what they have to sell. Being in game, and an official source; it should help in giving you inspiration to which clan suits best for your brewmaster!
Tldr; dorf brewmaster is legit really fitting, and any clan can be chosen, provided you do a bit of research on which you chose

Unrelated to Brewmasters but very important to Dwarven monks, check out the WoW RPG class known as a Runemaster. There’s a few handy guides about them if you check wowpedia or the likes.
Probably not of use but it is another potential angle if not related area of being a ‘monk’ as a Dwarf.

Interesting note is to be said that that even The Brewfestival was interrupted it didn’t change the intestine detail that Chen still thought Grimbooze still made better brew than him which made Chen inspired to find a better recipe to have him win eventually. So it’s added into the lore that Dwarves are best brewers currently in Azeroth maybe not best “Fighter as Brewmasters” but still
