What healers would you suggest for a beginner? In my dreams my healer can do mythic+ and raid.
With an offspec, can level normally in shadowlands, do 5 mask runs, kill elites (could be in the healer spec if its possible) and not so spammy.

Druid or Pally, perhaps even Monk, but druid & pally are - in my opinion - slightly easier to play as a beginner.
All three do fine in both M+ and raids, and all three have decent offspecs for leveling. (I will level as Mistweaver however, because I can’t stand Windwalker, and I prefer the safety of my heals over the tankiness of Brewmaster.)

I may be the most experienced beginner healer in the game! Every few months, I get the idea that I should try healing. The fit only lasts for a day or two, though, so groups are usually safe from me.
I’ll second Tinkspring’s suggestion of Druid. It’s a very capable healer, and quite friendly to beginners, even me. It has the great advantage of having all the other roles available as well, so you can go Boomkin, or Bear in a pinch, for solo content.
Priest is my other beginner-friendly suggestion. Holy is the archetypal and simplest healer: you hurt? now you’re not. It’s not doing so well in M+ this season, though, and its one DPS spec is … an acquired taste. As with all classes, we have no idea what it will be like in Shadowlands, but Shadow has been panned so far on Alpha.
Personally, I haven’t liked Holy Paladin since they introduced Beacon of Light, but there’s no doubt it’s doing well at the moment, and like Druid it also has DPS and Tank specs for ploughing through World Quests and Visions.
The best advice you can get is to watch some videos of the specs you’re interested in; it’s the nearest you will get to playing one.

But which of them has the lowest action per minute? Or should I spam something on every gcd?
Also holy priest animations and effects are my fav, I fear that solo play will be an uphill battle. How would I solo an elite or do 5 mask runs as shadow? Even leveling one is hard.
Healing is reactive thing so hard to define in APM. APM also depends on content and your party.
For solo play I just change spec with same gear at 120. No need to do solo stuff as holy priest.
5 mask run - you can reforge gear for your best dps spec and do it. It’s weekly thing so worth it.
Shadow priest isn’t hard to level - it just boring. Just double dot every thing - when your void blast ready use it - everything is dead. Imo shadow priests really shines with end game gear otherwise it’s way behind with same ilvl gear.
Hpriest is the DH of healers! I main it.
Not the very best spec to do M+ with in very high keys but more than decent for 15-18’s.
In raiding its the A-B-C beast once you spec it properly, no mana issues as well!
Now in visions… You will have a not ez time as shadow considering shadow cannot burst and allow you to skip mechanics, doable ofcourse!
Now MW is pretty solid in M+ whilst a bit… Bad in raiding and pretty much mana starved to each and every aspect of the game except pvp.
If you go as WW inside visions though they are so… lol
Can burst sometimes inside visions around 300k ST dps on bosses with the bufffs inside there with M+ gear while my priest with top tier raiding gear manages to get around 180k ST or so.
Hpala is a god no matter the content.
Rdruid is an awesome healer that i dislike its passive HoT playstyle.

Healer only heals when there is healing needed. Technically.
When a lot of dmg happens then all of the healers are spammy.
If you’re slow, and dmg is high; someone will die no matter of what healer.
