I was looking in Westfall and noticed that the horse at the very beginning is named “Old Blanchy” while I vividly remember it being Ol’ Blanchy. Am I the only one that remembers this, or am I just going nuts?

He does not, no. There are rare pikachus in the modern era with black-tipped tails (https://fictionhorizon.com/wp-content/uploads/2022/01/Cosplay_Pikachu_anime-1024x576.png) but vast majority, including Ash’s and all game versions for like the past 20 years, have had solid yellow.
