I think the reason people don’t often play Pandaren is because they have a stigma attached to them still as a joke race, which, to be fair, it originally -was- meant only as an April Fools joke. Not only that but Kung Fu Panda had come out before MoP was released and people couldn’t help associate the two, even though Pandaren’s were a thing back in WC3.
The Furious Five looked down upon a mere Panda, months later they bowed to him as he was the Dragon Warrior.

Pandaren unironically have the best weapon animations in the game- Including having the most voice acting and gimmick sounds (/roar is actually a bear growl).

Something which means all the Mogu are running around saying “Nom nom nom”.
I believe this is because Blizzard didn’t want to appear racist.
Maybe “nom” is the only word the Lorewalkers discovered.
What about “Om”?
Clearly just derived from “nom”. Presumably a different tense or grammatical case.
It’s actually because the Mogu language as we hear it is a derivation of the original binary coding they used to communicate when they were fully fledged titan constructs. Nom and Om being the two communicators.
So when you hear a pandaren expressing Nom Nom om Nom in reply to Nom om Nom Nom they mean wildly different things from eachother.
The pandaren lore walkers gave themselves an endless quest however. As the language is binary in nature, the amount of paper needed to properly communicate complexitiea of language even as simple as letters (let alone full sentences) is immensely vast. They’ve been working at it for years and years and only now they’ve managed to compile written records of equivalence to a couple of children’s books in terms of phrasing.
