At the moment I have Engi/Mining and do PvE content as resto due to elemental being unviable until next phase. I want to pick up a crafting prof for gear and tailoring looks to be best at the moment for the epic boots. I would prefer to pick up leatherworking as it fits the class theme better.
What I want to know is if there is any point taking it as a caster shaman with no interest in tanking. The Void-Touched Leather Gauntlets only provide spell damage and not healing with no passive bonus, whereas the Extraplanar Spidersilk Boots bonuses are perfect for both specs.
Phase 2 could potentially introduce some amazing mail caster items for leatherworking so I don’t want to waste money going tailoring for one slot only to drop it in a month or so.
The feet options in BFD for casters are abysmal.
Why no having both tailoring and leather working then? Gathering professions can be delegated to your alt.
Void-touched items are unique equips from my understanding. I also would have to drop engineering then. I already made a gathering druid and was deciding whether to get mining/herb or mining/skinning on it.
This is something that I was thinking about, as well.
I play Ele/Resto, but mostly Resto and not very interested in tanking because I suck 
Currently, running LW/skinning, mostly it fits to Shaman class and my other choice was Alchemy/Herb. I always pick a gathering profession because rarely playing alts actively or using the to farm only.
After I maxed out LW (wanted to go Elemental LW in the future theme-wise), realized that Tailoring has more things that could be useful for my character since the profession provides items with spell/heal bonuses and now having a second thought did I choose right and if I switch, would I regret if they introduce some mail armor items related to LW which could be good for casters.
Honestly, we don’t know much, I like it and hate it at the same time.

I’m glad I’m not the only one.
I will probably just stick with mining/engi until phase 2 as the gain from the tailoring epic is becoming minimal as I finally get drops in BFD. Data miners will mine and we will see what they add in for leatherworking.
