Profession leveling post-boost

I’m returning after many years hiatus for WOTLK classic, planning on buying a boost to jump right in. Will I be able to start leveling professions in WotLK, or will I have to spend time in the old world just to level up the professions before I can actually get started with WotLK?

Tried to google it but got some conflicting results.
