Professions classic, dragonflight and tww?

I’m a returning player from the past. I’m leveling my first character at Dragon Isles (10-70) and I’m wondering about the professions. I picked up Herbalism and Alchemy for my Paladin, just to try out.

So, I’m finding herbs from the Dragon Isles zones, but I can’t craft anything because every recipe is lvl60 or above. I’ve got few questions:

• I’m supposed to wait until lvl60 or I am missing something?
• Should I go to the old classic zones and level up the classic alchemy first?
• Do I need the classic alchemy any more?
• Do I need to level Dragonflight alchemy anymore, because there is the new expansion already waiting?

Same questions goes for any profession I guess.

That seems to be an oversight as otherwise it doesn’t make sense if they are pushing fresh level 10’s into DF zones.
