I can´t decide between Inscription/Herbalism and Minning/Enginnering.
What is best for DH Tank lore wise?
I know it does not matter in BFA, but for me it does matter lore wise.

Lorewise you should aim to find prof which fits elf, i can’t see any prof used by DHs except maybe weapons - blacksmith. On the other hand, Elf = high inteligence = good scriber, one with nature = good herbalist.
None, they don’t do such menial tasks.
They fight demons, that’s their profession lore wise.
Cooking bread with fel fire is not a career option for them.
Skinning and leatherworking? I mean… You slash, you kill, you skin. Make nice clothing with demon skin? Idk…
