Hello, I used lvl 70 boost token on an evoker- it has automatically LW and skinning as professions, is there any point in keeping LW right now or should I just change to gathering professions only? Do LWs craft anything cool and sellable? Ty for advice 
If you want to make yourself a LOT of gold come TWW you’ll want to grab two gathering professions since demand will be very high.
That being said, you won’t make use of it till TWW as each expansion has its own set of skills to level up for professions.
If you don’t care for that, and already got yourself a modest sum of gold, and are interested as a collector or a completionist now would be a good time to buy mats dirt cheap.

Rare/T3 materials from Mining , Herbalism and Disenchanting will be in really high demand at the beginiing of the expansion, so if you want to make a quick buck, level those up quick.
Gear crafting has almost always been a roleplaying perk.
A couple people per realm would have some really fancy (raid drop) pattern that would enable them to craft BiS or so.
Even consumables for old expansions, I recently checked enchanting, cooking and such, and none of them bring any value. I can afford them for fluff (hence: roleplay) but the AH is always cheaper. Plus there are daily QQ threads about profs being slow and complexity bloated.
More importantly, whenever I tried to enter the AH, I sold two things and then lost all profits trying to list and sell stuff. There are magnates (and bots) and they will bully you out really fast. (If you fight them hard, you might even get reported and suspended.)
Some visuals are hidden behind professions - BoP items.
Gathering can be nice, keep checking AH prices. Sometimes it ends up being a distraction, particularly while playing old expansions.

Basically you almost always gain gold gathering/selling and you can do it while questing/levelling. My Drakthyr has Skinning and LW and has made some good money with the skins but I don’t think she actually made anything by LW … or perhaps one thing for herself.
