Yep, they were already doable in season 1/2 so with season 3 gear you should tear through the raids, good luck! 
Yes. You may have trouble with the latter half of SotFO where some mechanics are not bruteforceable and have to be played, but it’s still doable. Maybe the fight against Anduin and the Jailer will take more than 1 minute.

Also i think SOD kelthuzad ( mythic at least) used to require pet toy or something to not get reseted , or more than 1 person . Not sure if still case , but probably check it before going in

You should have Arfus to help you right now, tanking the boss while you go down.
You should be able to solo every SL raid with 680 ilvl.

Arfus, a dog, now ‘tanks’ the boss while you go down to deal with the sepulchre.
Everything is soloable in Shadowlands.

by the way i went there with this warrior that i havent played back then in SL , and there is nothing in Oribos. no flight path or anything else. how can i go to korthia etc?
I only had an issue with the Jailer on mythic because of his mind control
but if you are fast enough (or lucky enough?) to get so far the pillars come up, you can hide from his sight and dodge it.
