I want to create a Polymorph macro that 1) stops casting any other spell I’m casting but 2) doesn’t stop casting Polymorph if I’m casting it (in case I spam that macro). Is that possible?

Nope.
You could put the stopcasting on a modifier but even then spamming with intent to stopcast will affect it also.
