Where is it? We have every other race under the sun but no Tauren.
We need more hooves and horns.
On a related note, what customisation features are you hoping for?
For me, definitely Grimtotem tattoos.

I concur with the OP. Grimtotem tattoos and perhaps warpaint designating the other Tauren tribes would be pretty neat. I’m also hoping to be able to customise your mane.
You look skinny enough, you need to gain weight first, do not you want some beef? I’m not greedy at all.

There is nothing new for taurens as of yet in alpha files. They seem to be the race they saved for last. Only in recent build they seprated eyes from the body to support eye color changing with new eye textures.
Tattoos, way more faces, some new skin colors would be nice. Also they could seperate nose rings from facial hair. Maybe even some more nose ring variations.
As for horns they already have plenty and I know know if you can come up with much more horn shapes.

I’m hoping for Native American/Canadian style warpaint ranging from blue/black, black/white, black/red/white, purple/white/black, blue/black/white, green/white/black, orange/white and ofc solid single colors like how high mountain has.
more horns too and engraved ones like how the antlers on Higmountain and feathers would be nice too
Native styled bone/tooth/claw necklaces/bracelets and ankle bracelets with many various look would make for great shaman, druid and warrior vibes.

Tattoos or warpaints, mainly (I could kill for a skull facepaint option.) Extra additions like the tail ring that you get with the deathguard mail belt is welcome as well.

Lots of races didn’t get any new customisation options.
There are some who appear to have done, but … they kindda haven’t? For example Pandaren just got the rotting DK skins. If you’re not a DK but you are a panda, you got nothing. So yeah.
Honestly, I just want more character customisation in general for any race or class anyway, whether it’s mine or someone else’s. Variety is fun. (BUT RESPECT THE LORE!!!)
There are quite a few options for Pandaren, or really any other race you can think of. We’re actually quite spoiled for options. Even if we have less combinations on each individual race, we just have so many varied races that look completely distinct, unlike in Elder Scrolls Online, for example, where the only real difference is the face and feet and the skin texture.
As for my own wishes:
I’d like for my neck fur to get fixed and for me to get literally just one more facial geometry.
Not a Tauren player myself, but do they have any hoof customisations already? Can you change the colours or does that change with skin/fur colour? Adding weathering or cracks to hooves could be an option.
Other races are getting scars, which would also work for battle-weary warrior Tauren. Perhaps brand/burn marks, matted fur or something similar? Could work nicely with the broken horn options.

I think they will get much more added later on id love to see more Jade Jewelry for pandaran, but i think they are focusing on the more played/requested while pandaran, tauren, goblins, gnomes are on the backburner for race accessories while scars will probably be baseline for all races while rest being added at some later date.

Honestly I don’t really mind too much. I’m sure they’ll get around sooner rather than later anyway, as you said.
Pandaren do have access to jade jewelry by the way - or at least the females do. You can actually see I’m wearing some jade earrings on the portrait.
But honestly… I do think Pandas, especially the females, are due for a little update. I hope they make one, even if it doesn’t have to be right this second.
It’s the oldest character model in the game, and it’s also the only character model with only one facial geometry. You can change the fur pattern around the eyes though, along with eye colour and jewelry, but that’s it.
