Not really seeing the vast improvement for wow using any of those examples. And the middle one is just the current system with a skin that looks like it was done on evlui.
I actually do admit, I do like how ESO has it, but at the same time, I also find how ESO has it a pain too.
Agree. Those are only visual improvements. If you really want to improve you need to look further then just the visuals.

I wouldn’t say it “desperately” needs anything, it does what it needs to do, simple and effective. No need to change how it works. If you are talking about a visual update, im good either way, doesn’t bother me.

Something that always bothered me since when i started playing 20 years ago is that searching through pages in the vendor can be tedious. Especially with the class filter it can be confusing (if you’re looking for an item that is hidden for you for example) if you cannot find the item you need. So better searching tools would definitely help to create a better vendor experience.
I like the category section but I really dislike scrolling because then if I want something I forget whereabouts in my scroll it is. With pages (which you can also scroll with) I tend to remember better and not zoom past something.

You perhaps wouldn’t have to, they can do pages like the skillbook has by now.
