Honestly, Discipline is some 70~80% Light, and only some 20~30% Void, so wouldn’t fit really.
Thematically most fitting is the shadow/void spec of a class shared with their Blood Elf brothers and sisters. Blood Elves have their reputable Paladin as staple of holy power for that race. Next to the Paladin is the Holy Priests, who’s brethren got an interest for the shadow magic.
So TLDR: Shadow Priests.
As for Umbric, he is an example of how NPCs have fluid or mixed classes as he is obviously a Shadow Mage - which is not playable and can’t be used as the prime example of thematically fitting Class spec for the Void Elves.
Now, what is a Shadow Mage and how is that any different from Affliction Warlocks? Those would pretty much be the same thing if the specs got worked to be nuances of each other without having to be within the rigid frame works of defined classes. Affliction Warlocks preferred minion would be a Voidwalker, which is in line with the void magic of the Shadow Mage.
By dismantling the classes and setting specs as nuances of each other, Destruction Warlock would be a Chaos Mage in the comparison, and Demonology would be the black wolf among the shadow specs with demons and Fel Magic.
Almost forgot about how Shadow Priests fits the picture of the Shadow Mage: The non-holy Shadow Priest is literally a Shadow Mage, so it would be no need for the Priest-variant. Priests would still have their Holy, and the more openminded Disc as a stepping stone towards the Shadow Magic.

So… should I go with a warlock or a priest? I’ve created a test character of both classes, but am still unable to decide
What do you want your character to represent/to roleplay? What story do you have for it?
Warlock: Already well established within the world of shadow/void magic, with no ways back.
Priest: You can be at the cross roads and start your character’s story as a holy priest who turns towards the shadows and end up as a Shadow Priest. You can immerse yourself far deeper in the character development with this class.
Both sound cool to me. Also considering a hunter. But not sure whether my hunter will be a Night Elf or a Void Elf. Same for rogue.
If you want to go for the races’ staple classes, Hunter is a typical Night Elf class. I am not saying Void Elf Hunters doesn’t exist, but hunters aren’t that involved with the void and have no class-specific reasons for not remaining a Blood Elf.
A Rogue is a Rogue, whether race it be. Still, why the Rogue choose to join the Void Elves rather than staying with the Blood Elves is a personal choice with a story behind. You don’t need to be this elaborate as a Night Elf Rogue.
Void elves are the followers of Umbric.
So its not like they couldn’t be any other class than magic users.
Alleria is literally a hunter
All Void Elves surely have that capability of some void stuff, but there are much room for the individual story - especially for why the non-magic characters goes this way rather than remaining Blood Elves.
Thematically shadow priest
Void Elf Shadow Priest is probably the most thematically fitting class/spec/race combo of them all, besides maybe Orc Warrior.
Hunter. With void/shadow beast pets.
Why? Because hunter.
Except Narua or what was that void-infused Panthera’s name on argus, with the cool void effects, there are not many
Maybe that purple wolf from Draenor?
There’s not that many actual ‘void’ pets, true.
But, I think that many of the purple pets would be a good choice as well, even though they’re not strictly ‘void themed’.
Here’s a pretty nice list. I just used the term ‘void’ on Petopia - there’s probably more options out there that would fit well.
Sub rogue, shadow priest or warlock if I had to hazard a guess.
