undead as i understand it are fallen humans or might be humanoids that have died. death knights are people who have been raised from the dead. so undeads were first killed and raised, killed and raised again as death knights?

The undead Argent in the prisoner building confirms it in the Dk starting area.
Death knights don’t have to be “fallen undead”.
They could be just humans, night elves, blood elves, orcs etc etc etc who fell in battle and were raised. They are essentially now “undead”, but their corpses were not rotting for anywhere near the time period that the actual “undead” race were, hence why most of them look like their race, and not undead.
Most DK’s were probably dead for less than 2 hours. Most undead have been dead for years and years, Sylvanas literally started pulling them out of graves like 10+ years after Warcraft 3, while Arthas raised most of the DK’s most likely immediately after killing them.
Perhaps being death knights, they can also maintain their bodies better, as they literally have control over death and disease. I guess there are exceptions but because said characters are major lore characters they get to keep their appearance. Nazgrim as a fourth horsemen wouldn’t be very cool if he looked like your ghoul that you summon.
Also, Arthas had death knights before “WoW” too, and there’s no saying you’re a “WoW” DK or a “WC3” DK. Basically, they just all started to break free around the same time (Wrath launch).

Some of the undead Death Knights could have also been DK’s under Arthas’ control before they broke lose from the Scourge. There are multiple ways to explain this one.

Only the first time is hard. After that they get used to being raised back from death.

They way i see it is the undead deathknights were risen by lich king when he wiped our lorderan. So they had more time to Stew. The other races are fresher corpses
