A “dark” paladin sounds intriguing. But I don’t see that go down well with the alliance. 
PS. I didn’t see any tentacles when creating a void elf for testing purposes

Depends on content you want to do and yoru spec. I can imagine subtlety void elf quite strong if you adapt the void form proc to burst window- thats just an example.
For safe pick I would go with night elf tho, as shadowmeld is always handy tool to have.
However in the end, aesthetics should be number one priority, racial abilities are soemtimes nice to have but it is for only the very top of min maxing potential, numbers wont be too different overall.

Night Elves for Shadowmeld (can be very useful both for PvP and PvE).
Void Elves for cheap transmog and style points (Void/Blood Elves are the only races with different invis stance, specifically for female models). Spatial rift is too quirky to use effectively in both PvP and PvE environments. Pushback passive is completely useless for rogues.
If you want to be natural born Gigachad – pick Dark Iron. Fireblood has insanely good synergy for rogue escape toolkit (and also can be utilized very well in PvE while being nice steroid), Mole Machine is amazing for old world roaming once you learn all spots, and dungeon dweller is simply nice for transmog runs.

I’ve heared, that dark iron dwarf currently is the best race for pvp in general due to all the dots from ferals, locks, assa rogues
Are you sure? I unlocked them about 6 months ago. Had to complete Legion (for the first time) until a point where I was offered a series of quests I had to complete before it was unlocked. Still haven’t unlocked mechagnomes, dark iron dwarves or kul tiras though.

tauren rogue is best they can stomp ferals out from stealth before they have a chance to aplay dots

That’s what I’ve read. What exactly do you mean by reputation grind? The requirement for exalted with Argussian Reach has been removed.
Void elf is really good for some burst classes like monk. the 5% damage proc on pull is best
It is so weak now its sad 
they went overboard as usual.

Getting friendly with 4 reps to unlock world quests isn’t considered a grind. Otherwise you might have followed an outdated guide or something.

Shadowmeld can also act as an extra Vanish when used properly, both in PvP and PvE

It’s the biggest grind I’ve done after completing that Shado-Pan grind with my Panda
You can get to friendly simply by doing the zone storylines (mostly halfway too). What if you still had to get revered with all pre-Argus reps to unlock Legion flying?
