Ele Shaman is more lava/magma than fire really, and it’s borrowed from the elementals.
Fire Mage fire is from Arcane magic, so again not pure fire.
Destro lock fire might come from the fel.
None of the classes’ fire is really “real” so to speak.
Really it’s up to which playstyle you prefer tbh.
Heck why not go Fury Warrior, they have a glyph that makes them catch fire when they enrage, also the fire glyph for victory rush.

Fire mage captures the volatile aspect of fire and explosions better than the other two
Destruction is a steady resource builder/spender. There’s no RNG involved at all, there’s way too much control to really capture the essence of fire! Plus the defining ability of that spec is Chaos Bolt, which is just a ball of green fel thing, not exactly fire.
Elemental Shaman… What they throw at enemies is molten rocks, dirt, not fire. Know the difference, it’s an IMPORTANT distinction. Also mostly zaps, not fire either
But fire mage, now. It’s just like fire. With the tiniest spark you can start a roaring inferno of pyro blast spam. You start with a small flame, and you kindle it into an explosive crescendo of numbers. Living bomb and Dragon’s Breath are some of the funniest abilities to use, and the fact that you can cast OGCD Fire Blast and Combustion WHILE CASTING will never make you want to play anything else ever again.
Go with fire mage. Trust me.
