What determines fun class for you?

unique gameplay and original skill ideas.
If the ears or eyebrows clip through helmets, they suck.
Not have to a few sec to press a button again because of CD or GDC.
Not having buffs (dmg/healing) and defence skilll on GDC.
Specially defence and high CD healing spells.

This new bs system with slowass rotation is borring as f.... (since dranor).

Next few months I spend watching if anything about gameplay is gonna change or not and maybe I'll return before classic (not 100% yet),
if it makes a sound when i /moo it's fun

Firstly what every individual enjoys is down to that individual, very subjective. I'd suspect for a lot of people it varies greatly, for some it might be strength and power of the class at the given moment and this can cause them to change frequently what they play (AKA FOTM), others play with a different mindset to enjoy the class fantasy that they are playing and thus they may not care -too- much about the class performance as it is fulfilling the enjoyment factor as to why they are playing it. Others may have entirely different reasons.

For me, it's a mix of both of the above. How well my character is performing generally is very important, but I must also feel a sense of relation somehow to the character whether it be through their role or what ever the class may be when playing it. Currently loving Paladin after taking a break from it in Legion, and that's partly to do with I believe it's doing good in general, but I've always loved the class fantasy idea of the Paladin in general.

Also enjoying Priest at the moment, mostly Discipline, and that's also to do with the above statements in regards to how I enjoy and personally select classes to play!
1) Skimpy armor options
2) Not being squishy
3) AOE potential
4) High speed (movement / attack speed)

Kinda hate to praise Blizzard but I do actually like how Fury feels at the moment. Feel like a proper meatgrinder. Could use some more haste though...
Enha shaman for me.

I always liked enha's burst, it felt so brutal and savage, and with the pvp talents enabled (namely ride the lightning and forked lightning), it's very fun to play.

Every stormstrike lands a thunder from the sky, the aoe skill crash lightning has a nice animation and triggers more thunders and it interacts with SS and LL, making them deal aoe damage and more lightning.

I love the sound of a thunderstrike, feels so powerful and impactful <3, I hope they don't decide to change those animation and sounds or the class is dead to me.
Is it survivable and relatively quick for solo content? Job done.
Sounds and movement skills.
Moving like a truck feels jarring (DK's and palas bleh).
Hitting something with a massive sword and the sound going "swish swosh" is even worse (looking at you BDK).

Never care for the tuning. You can always make any class/specc work outside mythic raiding. Don't care for parses.
One of the reasons why I love my monk is because of the synergy in their kit. Most of their abilities have interactions with other abilities that can completely change the way you play. For example, when healing I can choose (depending on the situation) which spells to use with Thunder Focus Tea. When I'm tanking all my damage abilities directly affect my defensive abilities. When I'm dps'ing I have to decide which abilities to block with Touch of Karma not only to avoid taking damage but also to buff up my Touch of Death damage.

This keeps me interested in what I'm doing even though I'm at the point where I am competent with all 3 specs.

My other main Character is my Shaman, which I love purely because of the class fantasy. There is something very satisfying about using a ton of fire and lightning to destroy your enemies. I love it, especially when I use my elemental aoe build and can combo my instant-cast chain lightnings into 2-3 earthquakes. It feels amazing!

Sounds like multiple classes unless counting bandage healing as a role - then could be the rogue in robes. Otherwise sounds like classic hunter where everything except plate was a hunter item.
Flashy animations. And mobility.
