The ones most in Theme imo would be Rogue, Hunter, Warrior, Monk For the explorer/traveler/Adventurer feel.
Shaman due to the elemental stuff and Evoker since they just woke up and want to explore.
Try WW monk. It’s a blast deleting mobs while leveling
it’s clearly Shaman judging by the ugly raid gear 
Thrall is not woke enough so he keeps getting benched.

You asked about being motivated but just looking at classes my view is

BM Hunter is the easiest and most fun class to play. Very good solo or in groups. IN dungeons, you go from pack to pack, you are always ON, never have to stop to cast, never miss a beat. No downsides.

Demonology, like BM hunter, a lot of pets, 18 imps out plus dreadstalkers and felguard and grimire felguard and maybe a few more pets I now forget! The downside is you HAVE to keep casting Shadow Bolt - that is slow cast, pins you down, and spoils the immersion.

Moonkin - tremendous possibilities but slow to ramp up and hard to play right. I gave up on it and now play Guardian and Resto (not this week of course).

Shadow priest - OK for ST but very finnicky for MT, and in my opinion clunky. Blizzard have plastered over (upped the damage numbers ) but still.

Prot warrior = currently IMO the most fun and rewarding class to play. I can have 5 of 45 sec - 1min CDs to take me from pack to pack in M+, great stuff.

Guardian - OK-ish tank, a lot of thrash and swipe, I am missing all the warrior’s CDs. but have talented so that I also have a few 1 min CDs, Spirits, Rage, Lunar - to take me from pack to pack in M+. Zillikin@Silvermoon.

Windwalker - tremendous DPS in M+, ST and AoE alike.

Evoker - I play it sometimes, do not like the short range, makes me feel I am in melee, and why not play melee like Monk or Rogue then. Good AoE in dungeons and ST during CDs.
It works fine.
It’s just really boring. Every time I think about levelling my hunter, I check if it’s timewalking. Since it usually isn’t, I just don’t. I have no interest in open-world levelling with this level of non-interaction with anything.
Hunter is decent in instances, but it needs those extra mechanics to make it at all interesting.
In my HO, if you have levelled one class there is very little sense in doing it again with another class. I am permanently parked in town, press I, join a group, 60K XP, rinse, repeat. When out of rested park the toon for a few days. Never have to leave the inn.
For the BM Hunter, yes the pets do 99.9999% of all damage so you have little to do directly than command pets. Not 100% if it still holds but I simmed the best talents to be the passive ones, so from all rich variety of options, I pick NONE, else I lose DPS. Just 4-5 buttons on the actionbar 
Really boring. But if you do not care about best DPS, then there are exciting talents and abilities. Fore reference, my hunter is Zillihunt@Silvermoon.
I actually enjoyed doing the DF campaign on 2 characters. First time I was whooshing through to get to 70 asap, second time I paid a bit more attention. Both times I mostly blanked out the centaur zone. I just don’t find those guys very interesting 
But I really loved the final zone’s quests with Chromie, and some later characters went and did just those on their own, after dungeon levelling to 68 
If I level my hunter, it will probably be as survival in timewalking, because at least that is a little bit interactive (and faster than regular dungeon queues). I have already given up on alt professions so I don’t care about gathering as I go, just want to get to 70, buy 343 from the AH, do world quests to 359, jump into LFR and go from there 
I can’t answer that for you but I can tell you I made a DH main. For me these guys are a hell of amount of fun. We can do things others can’t.
Shadowmeld Dh would be quite interesting. If I had the chance again to make that DH I would make it Alliance solely for that racial.
I am sorry. I just cannot stand her at all. That voice what is she doing in WoW. Her attitude. It is like playing a 1980s Japanese Sega game. Is she woke? Is she preaching? I cannot tell, but she really winds me up, on a couple of occasions I was doing her quests I switched all sounds off! CTRL-S for the win!
It’s kinda nice that pretty much everyone agrees on the same classes

The islands stealthed until now meaning that the dragon isles is a rogue.
It seems like there should be a quest line for them. They should be more active in the whole primalist situation.
The Explorer’s League have quests to go and find artifacts. Shouldn’t I be going and doing stuff for the Earthen Ring, especially as a Shaman (Exalted with them, I think - could be my pally is…)

i wish we returned to cool class armors like legion instead we got rock armor 1 2 3 4 5 6 7 8 9 10 11 12 13 … oh well maybe the Expansion after doomed to fail will actually be good
Shaman is the poster boy/girl for Doomed to fail with all this ugly elemental armors

Also riding a black dragon while in void form is that kind of bad omen that’s always worth a laugh!
Also, we all know we’re going to see some more void corruption before the end of this expansion so the fantasy is fitting as well.
