I feel I have so much control on elemental, ranged specs in general feel unparalleled in PvP. Add to that the burst damage from high crit damage + echo effects, and you’ve got a really fun class.
Open world PVE is fun on enhancement, you burst from enemy to enemy.
I haven’t tried Restoration, but the concept is quite memorable.
I switched recently to Shaman having been a warrior since Vanilla and I gotta say, though I don’t fully know what it used to be like, I wonder why more people don’t play the shammy.

Instructions unclear, created at least one char per class.
On a serious note, being a collector farming legacy content I’m not restricted by having to gear each char up through end game content, so I can enjoy each class far more.

The class fantasy of Light and Dark powers at your hand is always appealing for me. I could change them based on how I feel at the moment, so if something really upsets me I can just torture foes to death, or if I feel nice it’s natural to go Holy and spread faith.
And, there’s the middle ground of course. 
That, and many class sets are really pretty on priests.

My first character, and horde main, was a mage. With each expansion however I felt the class was more and more dumbed down, watered out and its utility rendered increasingly needless. With Legion I finally had enough and determined my second most enjoyable character horde-side were DK/DH. I ended up with DK as new main due to having invested more in the character.
I like death knights mostly for their coolness factor but I also feel it’s a class I play very well and that isn’t dramatically changed every content patch and expansion.

Lots of movement and flashing ability buttons… It… It keeps my attention.
I can solo everything and the mogs are the best.
It’s the class I get the most enjoyment out of playing. Been my main since I levelled her in Wrath.

I play a lot of different classes depending on the mood.
Right now, I’m play a rogue because I want that fantasy where I’m not as strong as a warrior, or as smart as a mage, but I don’t have to be when you’ve been blinded when I throw some dirt in your eye.
Also, I like character like Malcom Reynolds from firefly, captain Barbossa from Potc, Han solo from star wars and of course indania Jones. They all give rogue vibes off.
My first 2 characters were a paladin and a feral druid. I found it really hard to be in exactly the right place to hit something so I moved from melee to ranged and a priest.
I started as holy when I discovered a healer could actually dps as well but changed to discipline.
For reasons I finally changed to shadow and have been playing it for a very long time. The rotation is reasonably simple but it has lots of variation and we do have a few fun spells. I now can’t imagine playing anything else … I have a lot of SPs (and one druid).
Ranged dps. Pets.
That was it. Didn’t need any more reason.
And I still love BM hunter to this day.

This was my first character and has remained my main ever since. I got into WoW because a relative played it and I was bored so gave it a go. They also mained a Hunter so it was a case of ‘I can help you out with it’.
I have alts but very rarely play them. I always go back to my Hunter…even when Blizzard have introduced weird class/spec changes over the years, I’ve persevered with it.
As a kid I saw my brother play Assassins Creed and I thought it was the coolest thing ever. I obviously made a rogue when my mom finally let me play on her old account, this was back in TBC. Though I barely knew what I was doing I was running around in spirit gear cus I thought health regeneration would be strong.
Now, more than a decade later I obviously play alts, but I always come back to rogue sooner or later. Just something about it that I love. The idea of bleeds for assassination, the insane CDR that is built into combats toolkit, making it a very fluid spec to me. Though I’m not as much of a fan of modern subtlety I have fond memories of it pre legion redesign.
Watched the WoW cinematic and felt I love with the UD warlock and his infernal.
So I only created this character the WoW release day on EU. He is my main since.

In Classic I was maining Druid and my alt (after main) was Hunter. Since I was Alliance I couldn’t try Shaman so when I started to play retail I made one and I felt in love. Being able to cover more roles, especially as someone who just start the game is awesome but I stick with elemental and resto most, since I like to heal and I feel much better when I am range since I have small visual disorders and melee classes a bit hard to play for me. But will try enhancement in the future in low keys while I am helping guildies and will see how it will go. 
I am huge fan of classes that are related with nature. Recently created a Hunter, currently level 15 but I am having a blast! So much improvement comparing to Classic. Can’t wait to try it on max level, but not in rush, taking my time and enjoy in my free time playing it.
Also, beside those things, what’s keeping me playing specific class/spec is transmoging, especially if I can relate mog with lore, race, spec… My level 15 hunter already like 10 transmogs ready, and for shaman I don’t even want to say

Ranged dps, melee dps, melee tank, healer.

I chose hunter because then you are never alone even if you have no one to play with.
