Racials probably go to on horde side belf or orc, after that its arguably troll or undead–transmog wise its probably troll/undead/ HM tauren

hmmm i recently made a highmountain tauren and i kind of struggled to find a transmog that didnt look totally whack with their antlers. transmog suits normal tauren better for some reason imo.
racials are only super useful for the top 1% so i d say pick whatever you like best.
maybe take a look what customisation options each of the races receive in shadowlands.
edit: that is if you want to transmog your highmountain taurens headpiece. hiding it still works although i found that quite a bunch of shoulders clip a little bit through the antlers.
