I love my Big Blizzard Bear, which I sadly ride very little due to been a ground mount.
For me Blazing was the one that kept eluding me. Got Handmaiden probably 4 or 5 times. Second-to-last run Experiment finally dropped (wanted, but didn’t need it, wouldn’t have farmed for it) along with another Handmaiden. The sheer joy of being done with stupid Spine runs… 
Dunno! But I got Time-Lost and other cool mounts, BUT I think I love my cindermane charger the most!

My most prized mount is hard to say. 100 rep mount? Rivendare? Both Brewfest mounts? My favorite is Sundancer though.

If by most prized you mean the one that’s most important to me in any way, well… Priestess’ Moonsaber. I love everything about it except for the faction lock & the horde getting a random bat for the same grind. They deserve something just as awesome.

A few actually. Jaina’s water elemental is one I’m very fond of. Headless Horseman which I got in 2008, the Mage Tower book mount and since a few days he Onyxian Drake 
got a small heat attack when I saw it dropped.
As for unobtainable mounts: Tyrael’s Charger, the X52 Rocket and Ghostly Gryphon come to mind.

Dunno about favourite, but the ones i use most are Llothien Prowler as a ground mount and Ashes of Al’ar for flying

Swift Zhevra, always loved that mount. Sadly it is so incredibly low res that I don’t find myself using it much.

I tend to match my mounts to their character race and/or transmog. Starla often uses the Goldenmane horse for its colours.
I also prefer flying mounts that aren’t too big when landed, such as Squeakers and the priest mount.
The Yak (which doesn’t fit all environments) gets a LOT of use for levelling characters as I enjoy choosing and updating appearances for my adventurers.
Artwise, I thought the pirate ship and duel flying mounts (SW Gunship and Orgrimmar balloon) looked pretty amazing.
Glad to have a two person flying mount and allows me to help others.

probably my core hound from that one time in WoD where you could do a classic version of molten core.
that or my fel raven, also from WoD.
WoD had some neat mounts in general.

The Corrupted Dreadwing is one of my favourites too. Perfect for DH and Warlock.
The grind was mind-numbing, but it was worth it.

but the blazing drake is like the meme about having it at home its the lesser version i mean i guess your trying to complete the drake achievement its understandable since the life binder’s handmaiden is not part of that i think

I have a couple prized mounts. For one, the current KSM mount as it fits my velf Dunkiee’s mog perfectly. 
Second one would probably be Pureblood Firehawk, as 1) it fits my red-colored mogs perfectly (4 out of my 6 toons currently have such a mog) and 2) because I got it on my first ever Firelands clear without knowing it existed.
I also love the Heavenly Golden Cloud Serpent as well.
I really wish I had Ashes to complete this collection

i only like mecanical mounts i hate dargons 
I don’t have any rare ones. The rarest I have is probably the Great Sea Ray (fishing) or Frostwolf Snarler (AV of Olde), but neither of those are properly rare. I do have Snowstorm, but that was a paid-for mount so although it’s maybe a little rarer, it’s nothing to be proud of.
I really should up my mount game.

Unfortunately both Blazing and Handmaiden are required. Of course whichever one you’re lacking always gets an astronomical drop rate and the one you don’t you’ll see several times.
