I, personally would live at Booty Bay, safe from the Horde or Alliance deciding to go on their next genocidal rampage, nice enough climate, cool sunsets and the goblins there seem pretty chill. The only problem would be staying away from the pirate groups or not getting yourself into a load of debt from gambling.
Ironforge, or maybe Kharanos (in Dun Morogh) or Thelsamar (Loch Modan). Ironforge seems like a great city to live in with everything I could need right around the corner. I’m not sure I’d want to live in a city that’s underground though. I do like sunlight. If Ironforge wouldn’t work I’d go for one of the smaller nearby Dwarven towns. Nice, cozy and full of Dwarves who know how to enjoy life.
Given Azeroth is an absolute death world that’s constantly under threat, I’d probably choose Syria or North Korea over that place. Elwynn Forest if you made me go there. I’d feel less out of place if I lived amongst other humans, and it seems to be one of the safer areas, with plenty of farms too, so hopefully starvation wouldn’t be a thing for me.
Eternal war would keep me from certain risky hotspots but I’d gravitate toward an urban life of comfort, convenience and safety. As such, probably Dalaran, studying magic as the elves wouldn’t let a human into Suramar anymore.
