I really like trolls because of their connection to the loa and their culture but which race is better to rp as? Zandalari or the Darkspear?

Both work very well as shaman.
The difference is more about their overall culture. Darkspear are more tribal and down-to-earth compared to the proud, wealthy and sophisticated Zandalari.
Pick whichever one of those sounds more appealing to your character concept.
The way shamanism is practiced in Darkspear and Zandalari culture is similar. It is to be expected, however, that the Darkspear have been heavily influenced in their customs by the Tauren and Orcs and they practice darker magic.
Which is better depends on you.

The best Shaman race is Draenei, obviously, but if you insist on Troll;
I think the Zandalari have a lot going for them as a race, and their relationship with their loa is made a bit more explicit - but as far as Shamans go, I actually prefer Darkspear Trolls.
The aesthetic of Troll Shaman as tribal witch doctors speaking privately with dark gods is far more interesting and appealing to me, and much more “Shaman”-like (in the pop culture sense, at least) than the Zandalari religion which is far more akin to Egyptian cult religion.
Even creativity wise they are quite opposed: a Darkspear allows for more freedom in the character and its loa, while the Zandalari have more resources for you to draw from in the canon.
Zandalari do have more diversity to choose from.
I agree with Zag! I think as a Zandalari you have a choice between 3 main themes (that come to my mind, there can, of course be more creative possibilities):

The first choice would be the classical shaman choice. You roleplay an Elementalist, who, surprise surprise, communes with the elements. Typical shaman stuff. You could do that with a normal Troll as well. Though (Darkspear) Trolls also have the possibility to be neutral (some Darkspear Trolls are part of the Earthen Ring). Given the recent circumstances, I don’t really think Zandalari would join neutral orders such as the Earthen Ring. They look down on who they consider to be “lesser races”. And the whole Jaina business has made them seek out revenge.

You pick a Loa theme. Do you want to be directly connected to your Loa, like a Zandalari Priest? Zandalari Priests are very devout to their Loa. They harbor a much deeper connection to the Loa because they are the highest, most royal Trolls + they live on sacred land that is said to be directly linked to the Loa. You are more spiritual than the Darkspear.
Specific Loa that come to my mind:

As a restoration shaman you can roleplay a Priest/Warrior of Krag’wa. You use restorative waters or riptide-esque spells to sow destruction against your enemies.

Or Akunda, where you could probably use both water and lightning. Akunda is the Loa of Storms. But his followers also perform agricultural duties in front of his temple, so water spells tie in with that as well. Mostly, of course, you would use Lightning spells.
Etc.
- A Witch Doctor/Hexer/Shadow Hunter. Self-explanatory. You can also roleplay this as a Darkspear.
Zandalari can cover almost everything a Darkspear could cover thematically.
Do keep in mind though:
Zandalari are the royal Trolls. And their society is strictly hierarchical.

I have literally no idea on how Zandalari shamans get their powers and really not interested on digging external sources to find out. They don’t seem to need shamans anyways, they’ve got a giant golden throned kingdom.
Start on Echo Isles with your Darkspear and you’ll feel the elements and the voodoo with you.

I think his post raises a perspective that was ignored. Zandalari have a strong connection to their Loa, stronger than the darkspears (?) and yet their practices are highly interwoven with political affairs and formal rituals.
Instead a shaman from the Darkspears Tribe live in a place where spirituality makes a huge impact in his people’s lives, and looks more authentic than the zandalari, in a certain way.
Rest assured, I think your post is really good, highly informative, and deserves a like.
