Every server with huge amount of active raiders. You can check on wowprogress.
Mostly draenor, tarren mill and kazzak are the most populated ones on horde side.
But prepare for massive lagfest at launch.

If you are purely looking at making gold then you might want to check out the undermine journal to compare markets, although we are currently waiting for prepatch so things aren’t worth as much gold now.

You can also use wowprogress to get a guideline of populations, just remember to list in order of population.
