Why does every high rated player play orc mage?
GCD free int cool down + 20% less time on stuns. Hard to beat that, good versus every comp.
Orc is the best for most specs honestly, not just mage.
What pros does blood elf have in pvp combat?
None. (well a purge but it’s not really good)
The three races that you’re often comparing are Orc, Undead and regular Troll. The others are just because you prefer them.

Their racial can take down buffs.
Also the blood elf racial is so UNDERUSED in pve. It is insanely powerful, it takes down most enemy buffs and I very rarely see it go off.
Not really a fan of pve but good to know, but can they take down buffs in pvp aswell?
the reason their mostly orcs is that their insecure in their muscalinity and needs to play a race that they cannot compare to in real life 
I think for pve berserking is slightly better than blood fury.
