Stacking items is also very, very wierd.
For example, daily cooking reward bag is giving me spices one by one. …

It sucked since the beginning of time to loot and interact on live servers. This was also the reason the auto-loot for mailboxes and aoe loot were introduced. During wotlk prepatch the delay to loot became so huge, that playing became nearly impossible on bigger servers. Its just bad scripting/keeping the server costs at a minimum. Most private servers did never have this kind of problem, since looting doesnt have a delay there. This is why many people who played there are confused now.

Never (almost never) had any issues with slow looting or looting in batches except for the Dalaran Cooking Daily, idk why but it loots everything from the spice bag in batches like OP said. Very strange. Spaghetti code is my guess.
If you killed a large number of npcs, like clearing half of a scarlet monastery instance, you will still need easily 15-30 seconds to loot the npcs. As said, on private servers the looting is usually only limited to how fast you can click, since the loot gets into your bags instantly. Same goes for mailboxes.
Looting is instant for me, yes I’m going to need 10 seconds to loot 50 mobs because there is no AoE looting.
But I haven’t experienced any looting issues other than the spice bag from cooking daily looting the spices 1 by 1 (or by 2) and requiring multiple clicks to auto loot the bag.
And the obvious loot lag around the time SWP* got released in TBC classic ofc (on full servers), those were a fun couple of weeks, but that lag was artificially made by Blizzard (prove me wrong) to get ppl to transfer to dead servers.
*may have been during wotlk prepatch, either that or swp release, I forget easily
There is an addon you can install from curseforgr that increases the loot speed, cant remember the name but search for faster looting or something.
Since Classic, i use Leatrix Plus with the option fast looting, and no problem with that.
The only thing is Guild bank and Mail, horrible, i have to spam click 10 times to output an item.
