Female night elf have the most accurate pose when using bows. If bows are you thing, go for night elf female. Also the elves attunement to nature fits very well with hunter fantasy.
Female Draenei best for gun animations, give you that lock and loaded feel every time they do their reload animation.
Engineering has been incredibly good in SL, gives you teleports everywhere even older zones, you can craft a battle ress (consumed on use). You can craft scopes etc for your weapon.
If I were not to choose an elf, it’d probably just be a human for looks/animation if I am honest. Or a Tauren given their lore.

For Alliance the only real answer is Dwarf.

Definitely Race Type 3, Subrace Type 2, fiery beards are awesome + a great racial
Zandalari Troll is the only race i like atm on horde.
His transmogg is looking decent.
For Alliance i’d go either Draenei Or Dark Iron.
