Do you think that these achievements are , even , relevant nowadays ?
With players training hard on beta for this race and on the other hand the rest of the players who has not stepped into shadowlands yet, because they did not get beta invite.
I thought blizzard removed those?

Here’s how I see achievements in general, I read them and I’m like “Hmmm, do I really need to do that? is the time invested really worth?” The answer is usually no or “idgaf F that”.
People used to boast about achievements but -and it’s just from my experience- nowadays it seems that nobody cares about them except a few meta achievements for titles, mounts, etc.
And yeah like you point out OP, some people are already prepared to the teeth to speedrun leveling, you can even find an article just today on Wowhead dedicated to it, if you’re late to the race I’m not even sure it’s worth participating in.

Are the server first professions quests still left?
I don’t even care, it is a meaningless title and Blizzard put some timegating mechanism in place just so world first people get no advantage.
No. They shouldn’t be a thing.
They just promote unhealthy behaviour.
There are no achievements like that anymore.
(reminds me of seeing the Server First Druid to level 80 went off when I was ONE quest off dinging 80 myself 
)
