Well there are some (just not popular). Go on raider .io and check the top ranked windwalker monks for m+, most of them have their Twitch linked on their character profile.

I usually watch Whazz (rarely on a WW lately though) but really enjoyable, high level multi class arena stream.
Venruki plays a WW at times.
Cdew, although MW main spec, plays WW rarely so there is that option. He does visions as WW, actually learned couple of tips and tricks. Still a new monk player, so that helps a lot.
Banwell does a lot of arena on higher mmr as WW.
And altough rare as hens teeth, Pikaboo’s WW gameplay can be seen very rarely.
