I don’t keybind my mount, since I don’t dismount/mount every 5 seconds 
Use my keybindings for something else
It’s more a pvp/pve difference I would say. Keybinding your mount and trinkets make sense for even casual play there.

I can’t imagine playing without my mount bind.
As for trinkets, its not about the cooldown at all. It’s about how urgently you need to use them when the time comes. You just have to have them bound if you do pvp.
in classic, no need in retail.
I can’t imagine myself playing retail either.
