What race do you think is the best for paladin in terms of lore, racials, transmogs, starting zone, racial mounts, animations?

But Blizzard has said no for that one. So you’ll have to stick to Human.
Human:
Reasons:
- Of all the paladin races, they are the base race that the sets were designed as.
- The divine mount is the iconic Charger
- They do not have the goofy physique of the dwarves who share the charger too
- Human racials
Lore: As far as Azeroth is concerned, Humans invented paladins.
Alternatively the Blood elves make iconic paladins with that extra edgy twist about them along with their own special lore

I think lore wise youd be looking at human, draenei or lightforged draenei.
But out of those racial wise, human. Although, lightforged draenei have some cool light themed racials if you were simply going for the lore aspect.

the order hall house or the argent charger though, not the original charger.
The order hall charger is great. But the Blue and Red chargers are the most iconic ones

Look at me. All you need to know.
Excuse me, but if there is an iconic Paladin race, it’s the (Lightforged) Draenei. An entire society devoted to worshipping the Light with an entire order of holy warriors being its central pillar, if that isn’t iconic I don’t know what is.
In any case, Draenei have pretty middling racials. In the case of Lightforged I’d even say borderline useless. But I think they win lore together with humans, and they beat any other race in terms of looks, animations and transmogs 
I had a look a the Lightforged Draenei but I really don’t like hoofs, horns and tails.
Tauren paladins. Cool starting zone, racial mounts, animations, transmog and class lore doesn’t matter anymore
All the famous Paladins were human. So definitely human.
Goblin paladin will be cool
