Which server is the most populated for alliance?
Probably Earthshaker. It is one of the biggest EU servers, and 60% or so are alliance; at least according to Ironforge

At 60 yes, at all other level ranges, it probably sucks everywhere less you have a spellcleave group. Though people mostly look for groups in / world and not / lfg

It doesn’t have the most alliance players, but it does have more alliance players than hordes, which is rare.
The numbers aren’t really accurate but you can use ironforge. pro -> Demographics and wowclassicpopulation. com -> Details or Activity to get an idea of the population size and A/H ratio on each server. Remove the space after the . in both links.
In Vanilla servers were capped at 3k concurrent players (both sides), so the server was “full” and had a queue. Classic has increased the concurrent playerbase to something between 6k-9k without layering.

Yes, alliance is bigger here.
Bit expect alot more horde high ranking world pvp doomsquads because of It.

100%, sucks Alliance doesn’t have zeppelins all boats are filled with gankers.
And they all transfert to make our lifes a hell
