which do you think is better overall in both aspects of the game? paladins are obviously great healers but hybrid druids can do it all but not great

Depends on what you wanna do. Paladin is undoubtedly superior as a healer in both pvp and pve, but druid is very versatile which makes them a lot of fun in pvp.
It all depends which your more comfortable playing and which you manage to play the best, I played a druid main from 70 so can’t really speak for classic but it was great fun, you can win or escape most fights and as for a pally I occasionally played my parents in vanilla doing duels and some PvP and they can be very hard to bring down, plus They also have good escape routes when needed 
I can’t speak for raids and pve other than leveling as I didn’t do either.
Paladins are possibly the worst to level whereas druid is arguably the best.
As for end game neither are great dps classes but both are good healers. In fact paladin is a fantastic healer. Druids not so much but you have battle rez and innervate. Also you can be a pocket stealth healer for a rogue.
Both can tank 5 mans, and druids are often said to be better than warriors for 5 mans. However neither will be raid tanks (druids possibly off tanks but unlikely).
Having played both bow in classic format. I would say this…
If you want the most versatile at every role, not so dependant on gear to perform any role, Druid.
If you want to be a great healer, and have the option of doing other things but it will take a little more time and work to get there, Paladin
EDIT: further elaboration, been doing 5 mans with a Druid who tanks and his gear is highly unoptimised, mostly greens, but he can tank most 5 mans fine, a Paladin with equivalent gear will struggle, alot. And though not as big a gap the same applies in a DPS role. If you want to excel at 1 role and have other options, Paladin (as a healer) but if you rather keep those options and them be on more equal footing, Druid

Paladins are probably the best healers and PvPers out of the two but Druids are better tanks (on par with Warriors despite what the naysayers say) and levelers.
They’re also not quite as gear dependent as Paladins are.
as far I understand the hybrid classes:
Druid has the best mobility of any hybrid(HOTs and DOTs mean it can be effective while moving around very quickly and it also has a very strong instant cast game with Moonfire, Insect Swarm and Swiftmend)
Shaman has the best damage of any hybrid.(Chain Lightning, Windfury…)
Paladin has the best utility.(Dispell on allies is overall much more useful than purging, blessing of freedom, invurnerability(!) and what not.
