Does having over the required skill for an area have any benefit? For example, if your skill is at 225 and you’re fishing Greater Sagefish Schools in Alterac Mountains, do lures or +skill gear have any benefit?
It is requirement for some spots to be 300+
So yes going above max skill is not only possibly but also necessary sometimes

No, they spawn randomly. Your skill only affects your success chance on getting something from fishing.
Being overskilled guaranteed 100% chance. Floating objects have limit on tries and it is better not to fail due lack of skill
