Is there any stats about the latest population? It only says locked, high, medium etc. How can I know if for example Nethergarde keep or Earthshaker is filled with both alliance and horde, or how many active players there are?

I can safely guarantee you that none of the Classic servers are locked.
For SoM most (if not all?) servers are more or less dead. Era servers are merged into bigger groups, so even the individual server may be Low (or even empty), it is connected with other servers, so overall pop here is better.
The PvE group - where Netherguarde Keep - is low, but populated and a wild guess: 2/3 alliance against 1/3 horde.
