Which one is your favorite profession that you would pick if it were all the same profitable, and which is the profession you picked instead, because of profit?
(I count gathering and crafting both professions by the way, not only crafting.)
Well engineering is the coolest profession and required for high end PvP and PvE, for money making Alchemy + Herbalism is the safest bet as battlegrounds and raids get released and people need to use more consumables.
Engineering and Blacksmithing, because these are the optimal professions for PvP and they are also fun.
I think i have done them all at some point in Vanilla, Blacksmithing and Enchanting stand out as the worst.
The best, maybe herb/alchemy
I personally like fishing, and I remember makeing a fortune on fishing and skinning back in the day, unlike now, for some reason fishing is mostly worthless and skinning only brings in a little gold or less.
Probably Alchemy and Herbalism is the profitable way like many say but I really like fishing and hunting for meat/skinning so I guess I will keep at those, while others make tons of gold! 
Devilsaur Leather will probably be out of my league if maffia guilds monopolize on them since I’m a solo player mostly.
I like them all. But fishing and cooking are my facourites. From the primary, Herbalism and Alchemy. It’s fun and also useful. I do not look for the big G only to have enough to learn professions and spells.
Now I often begin with Herbalism and take Skinning just to earn some money, and change that one to alchemy at level 10-15. I have all the flowers put in bank, so I catch up.
Tailoring & Skinning
It’s easy to get mats for tailoring and it’s easy to add value - bags always sell for decent money on AH
Skinning is a never ending resource and Rugged & Thick leather sell well - sell quickly - and get left lying around all over the place
Devilsaur - I have no issues farming these - but often can’t be bothered- it’s too much hassle compared to just collecting Runecloth and Rugged Leather
