I hear this term thrown about a lot and I never understand what it means? So what does human potential actually mean?

This started when Shandris praised Keeshan and reprimanded another character for failing to see the ‘human potential’.
It’s when the homogenisation of the Alliance lore meets the character assassination that has them downright state they are fine with being second to some human.

And the fact that their presence is so awe-inspiring that 10.000+ year old beings fall perfectly inline with everything Human and they forget how to do basic things like thinking logical.

Outside of the meme-definition, I always imagine Human potential refering to the extraordinary ability to build an empire in a very short time. The kingdom of Arathor was able to spread rather fast, with the help of their affinity for magic. Before the Night Elves even blinked once, the whole Eastern Kingdoms was conquered and the Human empire was established.
They were able to restore quickly after dangers, and Stormwind still stands strong to this very day. And that's certainly praiseworthy.
Other than that, I don't know. But it's reasonable to respect the abilities and competence of the Humans in Azeroth.

Nobody said we shouldn't respect them for their ability to overcome adversiers in such short periods of times. People are complaining about the fact that when they do they cast giant shadows over other races and beat every other race at all the other things to...

Basically this.
Human Potential is the humanity's capability to overcome any obstacle and triumph against seemingly impossible odds.
I suppose that even the mighty Kaldorei wouldn't predict that extremely short lived humans could actually conquer an entire continent in a blink of an eye.
So, Human Potential might refer to the fact that humans might not seem so, but are capable of great deeds.

Yes, with that concept immortalised by one of the most important Night Elf characters praising humanity for it and admiring human potential, thankfully in datamined content that never made it live.

Tell me a warcraft addon or moment where Humans werent involved and important in some kind. As soon as the blue flag is somewhere, there is a human in charge

No one's asking for them not to be involved or to be unimportant. It's just a little telling when the characters described as the "Alliance leadership" are represented entirely with Human models, with not a single Dwarf, Elf or Draenei to be seen.
