Because Kul Tiran it’s not a separate race opposite to regular or Gilnean human.
They’re humans of Kul Tiras and as you can see all over Boralus, there’s variety of them - skinny, regular or big strongmen.
Gamewise only Kul Tiran Strongmen/women are playable.
This is not difference like Night Elf and Nightborne.
Consider Kul Tiran people as variety of other humans in Azeroth, not as a separate species.
Wish they had the normal human body as an option tho.

Regular human and Kul Tiran have this option since TWW to resemble Arathi of Hallowfall (kind of half elf kind as the humans of Stromgarde and elves of Quel’thalas mate between each other).
alliance is sacred to Blizzard so their character models are always well crafted.

Real answer: Kul’tirans weren’t conceptually different from other humans until BFA
Lore friendly answer: She studied as a mage of Dalaran, so had a completely different diet.
In Kul’tiras, there’s obviously something extra in the bread that Dalaran bread lacks (or they just have a different dining culture).

Anyway, afaik: Part of the Kul Tirans have mixed drust roots (vrykul) and some do not.
