Why are so many mounts in this game so gargantuan and over the top? Seems like all the mounts with smaller more discrete models like El Pollo Grande or the War Fox are either unobtainable or cost hundreds of euro equivalent in gold.

There’s loads of normal (or more subdued) mounts. I know, because I also prefer such mounts over the monster mounts or ‘badazz looking mounts with spikey saddles’ and such.
Mounts such as:
Vulpine familiar, Explorer’s Dunetrekker, Explorer’s Jungle Hopper, Stonehide Elderhorn, Risen Mare, Siltwing Albatross, Sandy Nightsaber, Terrified Pack Mule, Goldenmane, Lil’ Donkey, Skullripper, Blackpaw, Kaldorei Nightsaber, Umber Nightsaber, Frightened Kodo, Mollie, Smoky Charger, Admirality Stallion, Dapple Gray, Pureheart Courser, Elusive Quickhoof, Springfur Alpaca.
And those are BfA mounts only. There’s many previous expansion ones too!
They just look bad because most of the old mounts havent gotten modern updates unlike pets. Hopefully someday. Like Northrend Drakes backs look really awful.
World of Warcraft has a huge selection of mounts. From small to oversized. There should be more than enough to choose from to suit any needs.

Horses are actually my favourite mounts for ground and drakes for air. I love-love-love horses. All those bees, and what-not have gone way past me.
Same. I would be more than content with the Teldrassil Hippogryph if I had it. But alas, I have to continue using the Cenarion War Hippogryph from TBC. I love hippogryphs

The good mounts are reserved for ingame shop, what they give for free to us have 2 good mounts out of 400, the rest is pure trash.

I disagree, I have plenty of good free mounts. And the store mounts (gifted, not purchased) I have been boring me out quick. The vulpine familiars wings are just so … stupid.

I actually do not even know how you get one problem is that I do not like mounts that hoover Its really cool model otherwise and the taxi-variant is cool, and flying players are ok too, but … it hoover… it doesn’t walk!
But hover is flying mounts. You’re telling me you don’t like flying mounts!? Madness. 
You have to grind a lot of jelly and rep for the bee mount.
My ‘main’ as people would call her has been using same mount macro for now 12 years (!)
