Addons are great QoL helpers to your WoW experience, and WoWhead is a great place to start if you’re looking to try something new, have a look at this page:
The least you should have is “Vendor Price” which shows you how much items will vendor for, so you’ll know what to destroy if your bags are getting full. Secondly something with map coordinates, and most by now have installed Questie which shows you quest objectives on the map, saves you a lot of time. There’s an alternative I haven’t tried, ClassicCodex.
Leatrix is also great, it has vendorprice included and can also vendor grey items + repair automatically for you, I love it.
Then there are auction house addons, which you should probably wrap your head around to stay in the gold loop: TradeSkillMaster 4 and Auctionator.

I use a few others like WeaponSwingTimer, Details, HealComm, etc but they’re more of a personal preference that I don’t just recommend everyone to download.
I try and keep addons to a minimum and keep away from ones that really affect the game play. Being partially sighted has also influenced my choice a lot, half my addons are to make it so I can actually read things on the screen easier.
So I have:
Aux, makes the AH a little easier to search and post on as I can use item and buyout prices. I did try one other one but the prices were in a tiny font and were the one thing that I didn’t seem able to enlarge.
Extra Chat Fonts: Means I can read the chat with out having to put on my reading glasses and get my nose an inch from the screen.
NeatPlates: Makes the name plates bigger and easier to see.
EnergyWatch: Means I can have my mana bar enlarged and at the bottom of the screen so I can keep track of it easier.
Vendor Price, because I don’t want to AH things for less than I can vendor them, not really necessary with Aux loaded, but i prefer the pricing format.
TRP3, because I’m a role player (or at least will be when I’ve put some levels on my characters)

Yes, I am using a lot of AddOns. Always have been. Most of these I have been using since Vanilla or they replaced some addon that wasn’t continued.
Because none are mandatory not even threat meter. Devs release the game with all we need already in the Default UI, even more that what was possible back days. Dungeon, Molten Core and Black Wings lair were designed without the need of Addons in mind.
Because it’s more fun to have some surprise in the game, like :
“why this add is running?!”
“Oh sorry, I forgot to put some sunder armor on this one”
Add running to the healer, healer start to kite. Everyone is in panic, I switch to berserk stance manually to use Intercept on the lose mob, etc.
With a treat meters and some special name panel that indicate threats none of this things will happen because everything will be under control and the game will feel like dead.
Addons were never necessary but always intended. Vanilla was the first game I was actively using addons and macros to modify my gaming experience. For you it is not part of the original feeling, for me it is an important part. Especially the roleplay addons which I haven’t been using since Burning Crusade. It‘s good to have them back.
Questie - to prevent searching endlesly for quests and objectives Treathmeter - so I don’t steal aggro from the tank, and can see when he has enough to start DPSing Auctionator - So I don’t have to browse through endless stacks of 1 item when buying and can see historical sales prices for selling stuff. Vendor Price - good to know if something is worth selling on AH or just vendor it without actually having to run to a vendor all the time, and what to delete with full inventory Perl Interface - To better organize health bars from party members. Though not strictly necessary as DPS, It also makes it easier to pick the tank’s target to start DPSing on. And it’s also nice to put the healers health bar in center of screen to easily see if he gets damaged by a mob that needs CC / offtanking
