My memories of this from the other side are that Undead tend to only attack you if they think they have an advantage, orcs are extremely aggro, tauren tend to be fairly passive unless you start things and belves are either very bad at PvP or very good at PvP and nothing in between.
But what about the trolls???
I don’t really remember many encounters with trolls tbh

They really don’t notice these things unless people pester them enough

The last time I did a PvP world quest the human male paladins were extremely normal and then two NElves flew in and started 
until they got put down hard.
I feel like, not really having played a Horde character on a PvP server from the Alliance PoV Gnomes are probably the Undead of the Alliance for player behavior tbh, or maybe the Orcs. It’s been many years but I do remember reveling in “what the hell dude?” whispers back in the day.
the ones you need to watch for imo are the goblins.
you see so few of them that when you do their either horribly good or horribly toxic
Only in the sense that they like to spam /lol at you
Outside of that they aren’t common enough to encounter
If you see a group of goblins that aren’t in RP guilds: run

Hopefully Not A Pet, who I plan to promote to Battle Champion, will have more luck, but since she’s going to start at level 1 I’m honestly expecting her to get basically oneshot since we’re now facing level 5+ adventurers, so literally any spell will destroy her immediately.

I got knocked off a cliff by a guy who was camping on the side of a cliff in warmode last night.
I thought it was very funny. I thought it was even funnier when I realized I hadn’t put a glider on my new cloak yet.
