Even if it was heavily inspired by the middle ages, why would that matter? People of colour, women & even gay people existed back then as well.
Middle Ages wasnt just straight white dudes and nothing else.

It was quiet rare to find black and asian people in Europe thow generaly speaking of course. There where exceptions but it was definetly not the norm.
Do you realy want me to explain why Knights in a Monarchy,that is influenced by the light who litteraly has a Cathedral has simularitys to the European society from the middle ages?
If they are not i apologize my world view must have been blinded. I gues the Pandaren monks are also not inspired by the Shaolin Monks and the vyrkul are not inspired by North Mythology and Odin who is missing an eye actually has nothing to do with the other odin also missing an eye.

Long story short; middle ages was probably the jumping off point. But the wow humans are much more kitchen sink these days (as is the rest of wow).
not that it matters, middle ages wasnât ONLY white dudes anyway and representation really and truly doesnât hurt anybody.
Also, not a retcon, as somebody ELSE said, Anduin didnât suddenly wake up black.

Humans most basic fantasy setting is medieval time period, however just like the post above put it. Things have diverted from it thanks to dwarves and gnomes.

Has anyone seen Woo Ping weaponmasterâs return?
My human characters are almost always black (shocker), because itâs what I feel most comfortable playing, and they are from a plethora of kingdoms. Kul Tiras, Dalaran, Arathor - I donât want Blizzard to retcon all black characters to have always been from Warcraft Wakanda. Believe it or not, I want to play a Warcraft human. Weâre not an allied race.
