Demon Hunters are hard confirmed. Kyrians have stated they cant carry us over to the shadowlands after we ādieā but they dont know why. Eonar has confirmed that we can corpserun. Arthas prevented us from releasing our spirit while this was still a thing back then and even afterwards.
Whether us being mortals is a reason Azeroth chose us is hard for debate. At least I know of no sources in that regard.
And that the player specifically is connected to Azeroth and transcends even realms is also confirmed. Azeroth directly intervened twice. Once again NāZoth when she reached into Nyāalotha and the second time she reached into Zereth Mortis to break the Jailers MC attempt followed by buffing us with her powers.
Her being the reason for our immortality would also make sense. Shes Argus counterpart. Argus was the Titan of Death. So Azeroth being the Titan of Life would work (yes i am aware of Eonars title). She is also presumed to be the reason why we can use the stones in the maw while every other being (including the Pantheon of Death) cant as otherwise we would have to be connected to the First Ones themselves in one way or another.
On top of that Azeroth stands atop all the Titans. This connection would also explain why the Demon Hunters soul didnt go poof if one decides to sacrifice themselves during the starting area experience since Iām more than certain that the mechanism used was utilizing Fel Magic given it was a demon machinery which would have eradicated the Players Soul as any being that is being killed by Fel has their soul erased and they do not pass onto the Shadowlands.
Plus that something is wrong with the players is more than obvious. We have beaten beings to a bloody pulp that are planet ending threats all on their own. Just take Archimonde. It once required a trap to deal with him temporarily while the players have done it not just on their own but they have also eradicated Archimonde for good (meaning he can never resurrect) and they did it while facing him on his own grounds (twisting nether). And Archimonde was just one of many that we have slaughtered.

ok but you will have to grind rep with the new sire danny faction that gives you 1 rep per day 
there are 10 dailies that all give 0.1 rep so in about 5 years you should reach max renowed and unlock your vampire

Does this require enormous mental lore gymnastics in order to make work? 20 gold medals worth of.
Based on what weāre seeing so far itās impossible, and here are 2 in game examples:

The Malfurion - Ysera swap. Beings of the Shadowlands seem to belong there and not be able to exist in our plane without some sort cosmic issue.

Drakka during the Orc Heritage Quest. Itās very much alluded that sheās dead, and ancestor worship is still a thing.
Now as to how the Jailerās minions managed to walk on Azeroth even if momentarily, maybe we can attribute it to some sort Maw and domination related magic?
Finally, remember that beings of the entire supposed universe go to the Shadowlands. This means that the majority of the Venthyr werenāt even from Azeroth when they were aliveā¦ I guess you could argue that Azeroth is an interesting tourist destination for themā¦ But they have no reason to get involved in any of our conflicts (like somebody mentioned further up).
Also, the less of shadowlands lore we have to revisit the betterā¦

Alternative suggestion: delete the entirety of Shadowlands, purge all of its NPCs, armour sets, zones, quests, weapons, everything - and offer free brain surgery to everyone who played that expansion so that we can forget it happened.
Its already awful enough throwing my spear of bastion and being reminded of how terrible that expansion was - how it almost single handedly killed the game and ruined many fan favourite characters in the span of just 2 years, while flooding the game with thousands of collectibles that all look identical and will eternally clog up everyones gear, mount and pet list, but to imagine walking into town and seeing some goofy Runescape 3 looking vampire guy in MY Orgrimmar, helllllllllllllll naww

I could see potential for a Denathrius expansion where we venture into Nathreza, homeworld of the Dreadlords and with the aid of the Venthyr and Brokers, we go into Shadowlands 2.0 
But yeah, Nathreza is more realistic than shadowlands.
