I don’t know much about the actual Zandalar RP scene, but I can direct you towards the Painted Shields, a fantastic RP guild focused on Zandalar Trolls.

If you want a guild with a specific focus on the Zandalari, I can recommend the Painted Shields and Legacy of Zul. The former is a classic flavour of Rastari military RP accepting other tribes as well, whereas the latter is more of a politics/faith Zanchuli rp collective of priests and scholarly characters.
